product name field question

I am using Shop SIte Manager 7.1 for this particular client.

She has about 30 different product lines she will be selling in her store.
Each of these product lines has several subcategories and numerous products
within each category.

Here is are two sample product names:

Petunia Picklebottom - Boxy Back Pack - Dynamite Roll
Petunia Picklebottom - Shoulder Bag - Land Of The Lost

On the web page that displays the products, we only want:

Boxy Back Pack - Dynamite Roll
or
Shoulder Bag - Land Of The Lost

to display. However on the Shop Site "products" page in the back room, we
want the entire name including "Petunia Picklebottom" to display. This way,
all products from one line can be grouped together in the back room, but we
don't keep repeating the product line name on a page with 50 different
products all of the same brand.

How can I do this?

A custom product template that used a data field other than the product
name on the store pages as a sort of 'display name' field would be
perfect for this.

It would be much easier in Pro than Manager because Pro has 5 extra
fields for each product that you can use for custom things like this.

In Manager you would have to pick from one of the other fields that you
are not using and won't mess anything up if you use it for this, for
example if you aren't using More Info Pages for the products, you could
use the 'More Info Page Text' field for the display name. Or you could
put the display name in the SKU field, make a custom product template
that uses the SKU field instead of the name, and a custom shopping cart
template that does not display the SKU in the table of products in the
order.

Of course the full name of the product would still be used in the Name
column in the product table in the shopping cart, but I think you might
prefer this since they could have added items from 'categories' all over
your store to the cart so you might want the specific name there anyway.
