allow category and parent object creation and dynamic pages

I'm trying to create a simple cart with category drill downs to details.

ex: homepage > jewelry > earrings > drop circle earrings with options.

Howev er, the interface in back office makes creating this a pain. Also, I have to create each page. Why isn't there a create category option that can then have products (or other categores to create sub categories) assign to it?

Then I could just create a layout for all categories (or category types) that would be used for category drill down, and a detail page for the bottom level?

I've been designing online and working with programmers to create custom UIs for software and online years and I'm finding this backoffice pretty clunky/

And the documentation for creating custom templates could be MUCH clearer as well. It's minimally helpful.
